Cameron Aug 2012

Our annual vacation place. This year, we are slightly late in the planning for this place. Too many uncertain things happening around. .
On the way, Koko purposely make his funny face looking at the camera.

We got the hotel booked since June, with the promotion voucher from Groupon.With the upgrade of room to Suite, it was really great.The hotel didn't located the main road, you will have to drive 5-10min in a curvy road to reach the place

Angelso Fresh Strawberry Cheese Cake

My 1st time trying on it. This is what I get. My only fan is Koko. Luckily he helps me to finish it. Taste is good, texture still has improvement to go.



The recipe from my colleague..

The Base
·         175g McVities Digestive Biscuits
·         80g Unsalted butter
·         50g Castor sugar
1.      Crush all the biscuits till it become almost like sand texture (crumbs) and mix it with the castor sugar.
2.      Melt the butter. Pour the butter into a tray together with biscuits crumbs. Mix it well.
3.      Compress it evenly on the base of the tray. Put in the fridge for at least 1hour or till it is hardened.
4.      Make some small holes all over the base using a fork (this is to ensure the cheese sticks to the base).

The cheese content
·         500g cream cheese
·         1cup of fresh strawberry yogurt
·         1/3cup of fresh lemon juice
·         280g (or 2/3 of a small tin) of sweetened condensed milk
·         Fresh Strawberries!!! Cut into small pieces
·         5 teaspoon of gelatin powder

1.      Let the cheese cool down to room temperature. Then, blend it well to make it soft.
2.      Slowly pour in the lemon juice and continue to mix it.
3.      Next pour in the sweetened condensed milk and mix it well. Then pour the yogurt in as well. Blend it well and thoroughly.
4.      Put the gelatin powder into a small clay bowl. Pour some hot water into it. Then put the bowl under boiling water (similar to kukus air) to provide heat to melt the gelatin powder. The end product is a very thick and sticky gelatin mixture.
5.      Quickly pour this gelatin mixture into the earlier cheese content and then mix it well.
6.      Then put in the chopped strawberries. This time do not use the electric mixer, just use a spoon to evenly stir the strawberry with the cheese content.
7.      Finally, pour the final cheese content into the earlier prepared base tray. Decorate as desired.
8.      The cheese cake should remain in the fridge for at least 2 hours before consuming. Enjoy!

Practice makes perfect

100% agreed on it. Koko has been practicing by himself at home, surrounding the living room and kitchen area on his bicycle. He has been paddling it the wrong way or is just pushing around using his leg..until end of July. One day, he suddenly just found his way. He showed to us. He was so happy and I'm really proud of him. Though, it may be a small accomplishment, it is another big milestone to achieve.
